Vegetable Cod Bake

It very easy to make. Great for someone on a diet.


1 pound frozen cod fillets
3 tablespoons lemon juice
1/2 teaspoon paprika
1/2 cup slice fresh mushrooms
1/4 cup chopped tomato
1/4 cup chopped green pepper
1 tablespoon chopped fresh parsley
freshly gound pepper
lemon wedges


Thaw cod fillets. Cut into 4 portions and place in non-stick sprayed baking dish. Sprinkle with lemon juice an paprika. Combine mushrooms, tomato, green pepper, parsley and papper. Spread over fish. Cover and Bake. Serve with lemon wedges.

Oven at 350 for 25 minutes.
