Spaghetti Rolls

These are like stuffed manicotti. They are fast and easy to make. Serves 4.


1 package (8 ounces) manicotti shells
2 pounds lean ground beef
1 medium onion, chopped
1 teaspoon salt
1/2 teaspoon pepper
2 cups spaghetti sauce, divided
1 cup reduced fat shredded pizza flavored cheese blend or mozzarella


Cook pasta accordinbg to package directions. Place in colander, then rinse under warm running water. Drain well. Preheat oven to 350 degrees. Spray 13 x 9 inch baking dish with cooking spray. Brown beef and onion in a large non stick skillet, stirring to separte meat; drain drippings. Stir in salt and pepper. Stir in 1 cup spaghetti sauce; cool and set aside. Reserve 1/2 cup ground beef mixture. Combine remaining beef mixture with cheese in large bowl. Fill shells with remaining beef mixture unsing spoon. Arrange shells in prepared pan. Combine remaining 1 cup spaghetti sauce with reserved beef mixture in small bowl; blend well. Pour over shells. Cover with foil. Bake 20 to 30 minutes or until hot. Garnish if desired.
