Method: Beat together the Pudding Mix, Milk, Lemon Extract, Lemon juice and Zest until well mixed about 2 min. Set aside to thicken.
In another bowl beat the eggs for 1 min. Add the cake mix and beat for 2 min. Add the thickened Pudding mixture and beat 1 to 2 min more making sure all sides and bottom of bowl is scraped to mix all in well.
Pour into 13"x 9"x 2" GREASED and FLOURED baking pan. Bake in Pre-Heated 350 degree Oven for 25 minutes and test for done with toothpick test. Top of cake should be Golden when done.
Remove to cool on wire rack in pan. When cold frost with my Awesome Cream Cheese Frosting
AWESOME CREAM CHEESE FROSTING:
1/2 CUBE soft Butter (no substitutions)
1 8-oz block of softened Cream Cheese
2 Tbl Heavy Whipping Cream
1/2 tsp Vanilla
3-4 Cups Powdered Sugar (Confectioners Sugar)
Beat the first 4 frosting ingredients together for 3 minutes. Add the Powdered Sugar in increments, just to incorporate. When all sugar is used and the consistency is about right for you, beat for 2-3 minutes more to remove all lumps for a smooth Frosting. Add more or less Heavy Whipping Cream as desired. Refrigerate in covered container til ready to use. Cake must be cooled completely before frosting. Frost it in the pan for easy take along cake.
