Ingredients
4-6 pieces chicken breasts or thighs (boneless, cooked & chunked small)I usually bake it with olive oil, pepper and montreal seasoning.
11/2 cups shredded mexican mixed cheese, or your favorite
1 small can refrigerator biscuits, cut into small chunks right out of the can
1can cream of chicken soup
1/2 cup chicken broth
1 cup evaporated milk
fresh ground pepper to taste
1-2 cups of fresh carrot shreds or pieces
Directions
Wash the chicken pieces very well, and place in a 9" x 13" baking dish. Rub it with a little olive oil, and sprinkle with montreal seasoning and pepper. Place in 400 degree oven to bake til just done. (About 15 minutes) Remove from oven, and cut to bite size chunks and place in a large bowl. Reserve the baking dish with the drippings from the chicken to put the cassarole into to bake. Add all the other ingredients except 1/2 cup of the cheese. Mix well and add to baking dish. Sprinkle the rest of the cheese on top and put in the oven on 350 till slightly browned and bubbling. Enjoy!!
