Molasses-Mustard Pork Tenderloin

This is fast and tasty.


2# pork tenderloin
1/2 cup molasses
1/4 cup Dijon mustard
2 Tablespoons cider or white vinegar
1 teaspoon salt


Preheat oven to 400*. Combine the sauce ingredients; set aside. Line a 9x13" pan with aluminum foil. Place a meat rack on the foil and place the pork tenderloin on the rack. Slather 1/4 of the sauce on the pork and bake for 30 minutes. Remove from oven, using tongs turn meat over and slather with another 1/4 of the sauce. Bake an additional 10 minutes. Serve immediately with the remaining sauce on the side.
