Irish Batter Bread

A hint of orange & cinnamon flavor this easy to bake bread. Best if made a day ahead! Makes 1 loaf.

Ingredients

3 cups flour
1/2 cup sugar
4 tsp baking powder
2 tsp ground cinnamon
1 tsp salt
1 egg, beaten
1 1/2 cups milk
3 Tblsp grated orange peel
2 Tblsp shortening, melted & cooled
1 cup currants

Directions

-Mix together flour, sugar, baking powder, cinnamon & salt.
-In another bowl, beat egg, milk & orange peel. Add shortening.
-Add the liquid ingredients & currants to the flour mixture all at once. Mix until smooth.
-Pour batter into a greased 9x5" loaf pan. Let batter rest for 20 minutes at room temperature.
-Bake in a 350 degree F. oven for 1 hour, or until tester comes out clean.
-Cool loaf on a wire rack.
