4 large potatoes
2 Tbsp. butter, melted
1 cup shredded colby-jack, or cheddar cheese
1/2 cup sour cream
1/2 cup sliced onion
Heat oven to 375F. Pierce potatoes to allow steam to escape. Bake 1 to 1 1/4 hours until done. Let cool until you can handle potatoes. Cut into fourths - lengthwise - scoop out potatoes gently.
Set oven to broil. Place potatoes skin side down on rack or broiler pan. Brush with melted butter.
Broil with tops 4 to 5 inches from heat until crisp and brown. Sprinkle with cheese. Brown another 30 seconds or until cheese is melted.
Serve with sour cream and onions.
