Irish Soda Bread

This Irish Soda Bread is delicious and relatively low in fat and healthy!


1 1/2 c whole wheat flour
1 c all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 c butter, softened
1/2 c raisins, soaked and drained
3 TB apple cider, or white wine vinegar
3/4 c skim milk
2 TB honey


Preheat oven to 400.
Mix together the flours, salt, baking soda and baking powder. Cut butter in the mixture and stir in the raisins.
In a separate bowl combine the cider/vinegar and milk. Add honey and whisk.
Make a well in the center of the flour mixture and add liquid. Stir thoroughly ith a fork. Knead dough gently. Form into a ball and press down to form into a ball about 5 inches across.
Spray a pie pan and place dough in plate and brush with milk. Using a knife cut a shallow X on top.
Bake for 15 minutes at 400. Then decrease the temperature to 375 and bake for about 25 minutes or until toothpick comes out clean.
