Fancy and delicious


Custard filling for puffs:

Mix in saucepan: ½ c. sugar ½ tsp. salt ? c. flour Stir in 2 c. milk


Heat to a rolling boil in saucepan 1 c. water and ½ c. Butter. Stir 1 c. Sifted flour in all at once. Stir vigorously over low heat until mixture leaves the pan and forms into a ball (about 1 min.). Remove from heat. Beat 4 eggs in thoroughly, 1 at a time.

Beat mixture until smooth and velvety. Drop from spoon onto ungreased baking sheet. Bake until dry. Allow to cool slowly. TEMP. 400° TIME: Bake 45-50 min. YIELDS: 8 large puffs.
