Pork Roast with Herbs

This recipe has a nice mixture of herbs and yet is not too strongly flavored. Usually serve this with chunky applesauce and mashed potatoes.


Herb Mix:
3 garlic cloves
3 T olive oil
1 T thyme
1 T Rosemary

5 pound Pork Roast
salt & pepper


Mix herbs together. Rub roast with mixture. Put roast in plastic bag and refrigerate over night. Next day preheat over to 425 degrees and bake roast for 15 minutes. Reduce heat to 325 degrees and bake approximately 40 minutes or until meat thermometer says it is done.
