Poor Man's Fruitcake

This recipe came from the notebook of a neighbor whose great grandmother had written it down in 1902-and we have adapted it to the present. Originally this loaf was made with lard, lemon and orange peels,etc……


2 cups sugar
2 cups water
2 Tbsp. Oil
1 lb. Raisins
½ cut nuts
Add: 1 cup candied fruit
3 cups flour
½ tsp. Allspice
½ tsp. Cloves
1 Tsp. Baking Soda
1 tsp. Nutmeg
1 tsp. Cinnamon


Put ingredients in large sauce pan and stir and mix well then Boil ALL ingredients for five minutes then
Spray a loaf pan with cooking spray. Put mixture in pan. Bake at 350 degrees for 1 hour
