Recipe for Mushroom Purée

You can add a mushroom purée to almost any sauce.

Ingredients

4 cups mushrooms, rinsed and quartered
1/4 cup chicken or beef stock, preferably homemade
1/4 cup white wine
1 tablespoon butter
1 teaspoon lemon juice
1/2 teaspoon white wine vinegar

Directions

Purée the mushrooms with stock and wine in a blender or food processor. Add all ingredients to a saucepan and simmer until all moisture disappears
