Crabmeat Quiche

Lovely light lunch. A light salad would top it off perfectly.

Ingredients

9 inch pie crust, baked 10 minutes at 400F.
6 1/2 oz. can crabmeat
2 large eggs
1 cup evaporated milk
3/4 tsp. salt
1 Tbsp. flour
1 tsp. grated onion
6 oz. grated Swiss cheese

Directions

Set oven to 375F.
Flake crabmeat.
Beat together the eggs, evaporated milk and seasonings. Add crabmeat, cheese and flour.
Pour into the baked shell and bake 30 to 40 minutes at 375F, until set.
