Recipe for Potato Purée

Potatoes are a good thickener, although they do need to be forced through a sieve to make them smooth enough for a sauce.

Ingredients

1 medium potato, peeled and cut into 2-inch pieces
1 tablespoon butter, softened

Directions

Boil or steam the potato pieces until easily pierced with a sharp knife. While still warm, put potato through a food mill, a potato ricer, or force through a sieve (do not use a food processor). Whisk together with the butter.
