Irish Soda Bread

A St. Patty's Day Winner!

Ingredients

5 cups flour
1 cup sugar
3 tsp baking powder
1 tsp baking soda
1 tsp salt
2 sticks butter, softened
2 eggs
2 cups buttermilk
1 cup raisins, soaked in Irish whiskey

Directions

-Mix flour, sugar, baking powder, baking soda and salt in a large bowl.
-Crumble in 2 sticks of butter.
-In another bowl, beat the eggs slightly. Add the buttermilk.
-Add the egg/milk mixture to the dry mix. Fold in the raisins with a spoon.
-Bake in 2 greased 8" cake pans at 350 degree F. oven for 45 minutes to 1 hour. Tester should come out clean. 2 loaves.
