Preheat oven to 350 degrees. In a small saucepan combine the apricot preserves, apple cider vinegar and mustard. Bring to a boil and cook until mixture is slightly thickened, five to seven minutes. Set aside; reserve one-half cup.
Place pork roast in shallow roasting pan and cook for 45 minutes to 75 minutes, or until internal temperature is 150 degrees. Brush roast with apricot glaze periodically during roasting. Serve with reserved glaze.
