Applesauce Raisin Cake

A delicious spice cake with applesauce and raisins.

Ingredients

Nonstick cooking spray
1 tablespoon flour
1 cup unsweetened applesauce
6 tablespoons margarine or butter, softened
1 cup granulated sugar
2 large eggs
1 ½ cups all purpose flour
1 teaspoon ground cinnamon
1-1/2 teaspoon vanilla extract
½ teaspoon ground nutmeg
½ teaspoon baking soda
¼ teaspoon salt
1 cup golden raisins
1 tablespoon powdered sugar

Directions

Preheat oven to 350º.

Spray bundt pan with nonstick cooking spray. Dust lightly with 1 tablespoon flour.

Place applesauce in fine sieve over bowl and allow to drain for 20 minutes.

In large mixing bowl, combine margarine and sugar; cream together with fork until smooth. Add eggs, stirring until blended. Stir in applesauce.

In small bowl, combine flour, cinnamon, vanilla, nutmeg, baking soda and salt. Add to wet ingredients, stirring until just mixed (do not over stir). Stir in raisins. Pour the batter into prepared pan.

Bake at 350º for 40-45 minutes, or until wooden pick inserted in center comes out clean. Cool 30 minutes on a wire rack. Gently pull away edges with knife and invert pan onto cake plate; tap gently to remove. Dust top with powdered sugar.
