Potato lasagna

This is a potato dish layered with lasagna noodles and browned onions.


9 lasagna noodles water
2 sticks butter milk
1 pound american cheese
thinly sliced onions
1 small box instant potatoes


I cook the lasagna noodles according to the package directions. I then heat the liquid 1/2 milk and 1/2 water minus 3 cups. I add 1 pound of american chees and 1 stick butter to melt, stirring frequently. When it melts and is heated, not boiling because it will curdle the milk and the solids will stick to the bottom of the pan, I take it off the heat and add the potatoes. Salt and pepper to taste. You can control the thickness of the potatoes with the instant. I always have an extra box in case I have too much liquid. I also have browned several onions in butter. I then layer in a 9x13 pan 3 noodles, 1/2 the potatoes and 1/2 half the onions. Than I do repeat. I finish with 3 whole noodles. This dish tastes like potato pierogi and is a great hit at pot-lucks.
