Grandma Hill's Banana Bread

This recipe makes a very moist quick bread that should be eaten within a few days, or refrigerated. I freeze leftover bananas, then thaw them in their peels, snip off the tip with kitchen scissors, and squeeze them out into a measuring cup. Then I just stir them up with a fork, and they are ready to go.


1/2 c butter
1 c sugar
2 eggs
2 c flour
1 t salt
1t baking powder
1/2 t baking soda
2 T milk
1 1/2 c mashed bananas
1/2 c nuts (*optional)


Pre-heat the oven to 350 F
Cream the butter and sugar
Add Eggs
Sift dry ingredients together
Add dry ingredients alternately with banana/milk combination

Bake in greased (or sprayed) loaf pan at 350 F for 45-55 minutes.
Also makes great banana muffins or mini-loaves for kids.
