3 ounces cream cheese, softened to room temp
1 Tbsp milk
1 lb confectioners (powdered) sugar (4 cups)
Paste food coloring, optional
Peppermint or Spearmint oil
Combine cream cheese and milk with a wooden spoon, then add coloring, 2 cups of powdered sugar, and the flavoring oil. Add remaining powdered sugar, 1 cup at a time. When you get to the last cup or so, you'll need to knead it in with your hands.
Using a melon baller, scoop out balls and roll smooth with your hands. Lay on a silicon sheet or parchment paper, and use a fork to flatten. Alternately, especially if you plan on dipping them in chocolate, use the bottom of a glass to flatten. Let dry on top side, then flip to dry bottom. Store in an airtight, sealed container.
