Mother's Chess Pie

Mother's Chess Pie
This has been a family favorite at holiday meals for several generations. I have yet to see a chess pie recipe anywhere like it. It quickly becomes the favorite of anyone I make it for. My mother died in 1977, and she was the only one that made it and had the recipe. It fell to me to carry on the tradition.

Ingredients

4 eggs
1 1/2 cups sugar
1/2 cup melted butter
2 tablespoons Carnation evaporated milk
2 tablespoons cornmeal
1 teaspoon vanilla
1/8 teaspoon salt
1 8 or 9 inch pie unbaked pie crust

Directions

Beat eggs and sugar till light and lemon colored approximately 5 minutes. Then add remaining ingredients one at a time incorporating well after each addition. Pour into pie crust. Bake at 325 degrees one hour. It is wonderful served slightly warm but just as good cold.
