In a large bowl, add biscuit mix, water, and pepperoni; stir with a fork until dough forms. Turn onto a surface dusted with biscuit mix. Knead until soft, not sticky.
Roll dough into a 10-inch square. Cut in half. Cut each half crosswise into 14 strips. Twist ends of strips in opposite directions. Place on ungreased cookie sheet, pressing ends onto pan to fasten. Brush each breadstick with butter. Sprinkle with parmesan and mozarella, if desired.
Bake at 425 degrees for 10-12 minutes.
