Ingredients
6 to 12 ounces Nestlé Toll House chips
[Use any flavor you like, or combination thereof. Experiment and have fun. Chocolate and Butterscotch are great. Try the newer flavors available now such as Mint, Chocolate Chunk, Peanut Butter and Milk Chocolate, Swirled Morsels or Premier White Chips. Classically, of course, use Nestlé Toll House Semi-Sweet Chocolate Morsels]
1 cup butter [2 cubes]
1/2 cup sugar-granulated white
1/2 cup brown sugar
2 egg yolks
1 Tbl. cold water
1 cup flour-unbleached white
1 cup flour-whole wheat
1/2 tsp. baking soda
1/2 tsp. salt
2 egg whites [separated from yolk and placed into a dry, glass, or stainless, bowl used for whipping egg whites.]
1 cup brown sugar
Directions
Preheat oven to 325 degrees F.
Bake single recipie in a 13" X 8" baking pan. Bake double recipie in a 15" X 10" jelly roll pan.
[Spray or wipe pan with light touch of oil, if using other than non-stick material.]
In large bowl, COMBINE butter, sugars, egg yolks, vanilla, and water until mixture is smooth, and lump free.
COMBINE flour, baking soda and salt in small bowl or sift onto wax paper.
STIR flour mixture into creamed mixture until a dough is formed.
PAT dough into the prepared baking pan.
SPRINKLE Nestlé Toll House Semi-Sweet Chocolate Morsels evenly across the dough (or Nestlé Morsels of your choice).
Press Morsels lightly into dough. Do not press Morsels to the side of cookie pan. Set baking dish to the side.
BEAT egg whites until STIFF. Continue beating, on low speed, while sprinkling brown sugar into the beaten egg whites.
When all the brown sugar is added, mixture should be firm, smooth and glossy.
SPREAD the egg white and brown sugar mixture evenly over the top of the dough mixture, covering all of the Nestlé Toll House Morsels, yet keeping the whipped mixture away from the edges.
[If some of this mixture does touch the side of the baking pan, wipe clear with a damp paper towel.]
Bake in oven for 35 minutes, until topping rises and turns a toasty golden color.
Cool in pan on wire rack. Wait to cut into bars until cool. You make cut into any size you wish. However, these cookies are rich and delicious, so small bars make an excellent treat.
Cut into larger bars for dessert, and serve with tea, coffee, ice cold milk or a mocha or latté beverage.
