Seven Grain Bread

Believe it or not, something I put together for a technical writing class. But it is good, and has enough grain to be good for you.


3 1/2 cups warm water (Aboout 110 F)
1/4 cup brown sugar, or honey
3 Tblspns Olive Oil
1/4 tsp salt or to taste
3 Cups unbleached white flour
2 Pkg Active Dry Yeast
1 Cup Quick Oats
1 Cup whole Wheat Flour
2 Cups 7-Grain cereal( Found in the health Food section or Hot Cereal Section in your Grocery)


In a large bowl, mix water, olive oil, salr brown sugar(or honey) white flour and yeast. Set this aside until it starts to bubble. Meanwhile in another large bowl mix all the rest of the dry ingredients except the white flour. Once the first bowl starts to bubble, slowly mix in the other dry ingredients, after all are mixed in add enough white flour to make a stiff but elastic dough, knead adding the four slowly, until it has reached the desired consistency. oil the inside of a large bowl place the dough inside and turn until all surfaces are oiled, place a large cloth over the dough and let it rise in a warm place, for about an hour or two, until double. Once it has doubled in size, punch down and shape into desired loaves, 2 Large, 3 Medium or rolls if you like. Bake at 350, for 40 to 50 minutes or until nice and brown. They are done if you knock on them and it sounds hollow.

Cool a rack once you remove them from the pans, may rub with oil if desired.
