Cranberry Pumpkin Bread

Here's a new twist on an old favorite.


1-3/4 cups flour
1 cup sugar
2 t. baking powder
1/2 t. baking soda
1 t. cinnamon
1/2 t. nutmeg
1/2 t. allspice
1 cup canned pumpkin
1/2 cup canola oil
2 eggs, lightly beaten
1-1/2 cups fresh or frozen cranberries - coarsely chopped


Preheat oven to 350F. Grease and flour 8x4" loaf pan.

In large bowl, mix flour, sugar, baking powder, soda, cinnamon, nutmeg and alspice.

In small mixing bowl, combine pumpkin, oil, and eggs. Add to dry ingredients, stirring until just moist. Stir in cranberries. Spread evenly in prepared pan. Bake for 70 - 80 minutes until toothpick inserted in center comes out clean.
