Grease and flour cake pan. Put apples in a large mixing bowl; break eggs over apples and mix with fork; mixing well.
In medium bowl, combine all dry ingredients.
Add dry ingredients to apple mixture and stir well. Add oil, vanilla and nuts; stirring well.
Bake at 325 degrees for one hour, taking care not to overbake. Test for doneness by inserting toothpick in center of cake.
