Fresh Apple Cake

Fresh Apple Cake

Edited on Aug 11, 2004

This is a very moist, delicious cake. I drizzle glaze over it; but it doesn't really need frosted.

4 c. chopped apples
2 eggs
2 c. sugar
2 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1 1/2 tsp. apple pie spice
1/2 c. oil
1 tsp. vanilla
1/2 c. or more chopped nuts

Grease and flour cake pan. Put apples in a large mixing bowl; break eggs over apples and mix with fork; mixing well.
In medium bowl, combine all dry ingredients.
Add dry ingredients to apple mixture and stir well. Add oil, vanilla and nuts; stirring well.
Bake at 325 degrees for one hour, taking care not to overbake. Test for doneness by inserting toothpick in center of cake.

Cool and enjoy!
