Fake Apple Pie Squares

What a great sweet treat to do with the zucchini the neighbors pushed off on you. The family won't know they're not eating apple squares. Fake Out! Leona Siekierski faked out the Reverend with this. He was telling everyone to be sure to get one of her apple squares... then she told him that's not apple Rev. it's zucchini. His reply;"Now you wouldn't lie to Rev. would you"? Try it on your family and see what happens.


6 to 8 C. peeled, sliced zucchini
2/3 C. lemon juice
1 C. sugar
1/4 tsp. nutmeg
3/4 tsp. cinnamon

Crumb Crust:
4 C. flour
2 C. sugar
1/2 tsp. salt
3 sticks butter


Use a pastry cutter or 2 knives to combine ingredients for the crust. Should be coarse crumbs. Save 1/2 C. of this mixture to thicken the filling.
Put filling ingredients in a saucepan on the stovetop; add 1/2 C. crumb crust mixture and cook for 20 minutes.
On an ungreased cookie sheet, pat down 1/2 of the remaining crust mixture to form a crust.
Bake at 350* for 8 minutes.
Spread filling over the crust. Top with the remaining crumb mixture.
Return to oven and bake 30 minutes more. Let set at least 30 minutes before you cut it.
