Upside down Rhubarb cake

Different and really good, I need all the rhubarb recipes I can get.


5C chopped rhubarb, 1C sugar, 3C miniature marshmallows, 1(3oz) package strawberry flavored gelatin, 1(18.25)package yellow cake mix.


Preheat oven to 350, grease a 9x13 pan, in large bowl stir together the rhubarb, sugar, marshmallows and dry gelatin, pour into the bottom of the pan, distribute evenly, mix cake according to directions, pour over the rhubarb mix, bake for one hour or until toothpick inserted comes out clean, run a knife aroud the outer edge of the cake to loosen, turn out (upside down) onto a large serving plate while still hot, allow to cool before serving.
