¾ c. sugar
½ c. margarine or butter, softened
1 c. (2 medium) mashed ripe bananas
1/3 c. milk
1 t. vanilla
2 c. all purpose flour
½ c. chopped nuts, if desired
1 t. baking soda
½ t. salt
Heat oven to 350*F. Grease bottom only of 9x5 or 8x4 inch loaf pan.
In large bowl, beat sugar and butter until light and fluffy. Beat in eggs.
Add bananas, milk and vanilla; blend well.
In small bowl, combine flour, nuts, baking soda and salt; mix well.
Add to banana mixture; stir just until dry ingredients are moistened. Pour into greased pan.
Bake at 350*F for 50-60 minutes or until toothpick comes out clean. Cool 5 min./ remove from pan. Cool completely.
Wrap tightly and store in refrigerator.
** I like making them in mini loaf pans. They take about 20-30 minutes to bake in these.
