Whole Meal (Whole Wheat) Scones

While visiting London we stayed in a furnished flat and copied this recipe. It's a wonderful remembrance of London.

Ingredients

4 oz. whole meal flour (Whole Wheat Flour)
4 oz. whole white flour (All Purpose Flour)
2 oz. margarine or butter
Pinch salt
2 oz sugar
1 teaspoon bicarbonate of soda
2 teaspoons cream of tartar
Milk

Directions

Sift flour & mix together all dry ingredients. Rub in margarine & mix to a softish dough with milk. Roll out & cut into rounds or shape into 2 rounds, flatten out with the palm of hand & cut into flour, making small triangular scones. Place on greased & floured baking pan & brush over with egg or milk. If liked, vary by adding sultanas (raisins) or 2 teaspoons ground ginger to the above ingredients. Bake at 425 degrees for 10-15 minutes. To make a savory cheese scone, omit sugar & add 2-3 oz. finely grated cheese & seasoning. These scones can also be cut into fingers and cooked on a griddle. Cook as for Welsh Griddle Scones on four sides.
