Orange Bread Pudding

This is a lovely addition to a breakfast meal or as a dessert. It is easily made from ingredients from the cupboard. Makes 6 servings.


10 slices day old bread, crusts removed & cubed.
1 (12 oz) can mandarin oranges, drained.
1/3 cup raisins
1/2 cup chopped almonds
1/4 cup butter, diced
1 1/2 cups milk
3 eggs
2/3 cup packed dark brown sugar
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract


Preheat oven to 350 degrees farenheit. Grease a 13 x 9 inch baking pan. Mix together bread, oranges, raisins and almonds. Transfer to prepared baking pan.
In a saucepan over low heat, heat butter and milk to just below the simmering point, but do not boil. Remove from heat.
In a large bowl, stir together eggs, sugar, spices and vanilla. Stir in milk and butter, then slowly pour mixture over bread mixture. Let stand 10 minutes for bread to absorb liquid. Bake 45 minutes or until set in center and golden brown and crisp on top.
