Combbine apples and water in a large dutch oven;bring to a boil. Cover,reduce heat,and simmer 20 to 25 minutes or until apples are tender.Mash apples. Stir in sugar and vinegar;bring to a boil. Reduce heat,and simmer uncovered 2 1/2 hours or until mixture is very thick. Stir in spices. Store in refrigerator up to a month.
