Ingredients
1 eggplant meduim size, peel and dice
3 tomatoes
1/3 c. butter
2 onions, sliced thin
1 c. grated cheese
1 c. bread crumbs
Directions
Saute eggplant in butter. Layer in buttered pan with onions, tomatoes, bread crumbs and cheese. Save some for top. Dot with butter and bake at 375 degrees for 35 minutes.
