While searching for lo-carb recipes I came across the basic recipe and added to it to make it my own.


2 lbs. grated cheddar cheese
1 med. onion finely chopped or grated
2 cloves garlic minced
2 jalapeno peppers finely chopped
1 tbsp hot sauce
7 eggs well beaten


Mix all the ingredients together in large bowl until well combined...spread into a greased 12" x 18" baking dish. Bake at 375 degrees for 30 minutes, until lightly browned on top and well set. Let cool and cut into 1 1/2" squares. Serve warm, room temp, or cold. Can be rewarmed for a snack. Great for Lo-carb dieters.
