Peach pudding cake...

Delicious way to use peaches!


6 ripe peaches or nectarines (peeled, cut in half and stones removed)
4 heaped teaspoons brown granulated sugar (Demerara sugar)
4 1/2 ounces butter
4 1/2 ounces granulated sugar
2 large eggs
4 1/2 ounces self rising flour


Preheat oven to 350 degrees. Put peaches in the saucepan with the sugar, and about 4 tablespoons of water. Simmer peaches for 5 mins then place
into a well-buttered and slightly floured ovenproof dish. Beat together butter, sugar and eggs unti llight and fluffy, add flour mix, and spread over the peaches.
Bake in preheated oven for 45 mins, serve with hot custard, vanilla ice cream or creme fraiche with a tiny bit of sugar mixed into it...
