Squash Patties

Squash Patties

Delicious way to use up all that yellow squash in the summer. Easy too! The kids love them too, just don't tell them it's squash!

Ingredients

2 cups grated well drained yellow squash
2 tbsp onion
1 tsp salt
pepper to taste
1 egg
1/3 cup self rising flour
1 c shredded cheese

Directions

Wash squash and trim ends. Shred squash using food processor or hand grater. Drain in a strainer for at least one hour. Mix all ingredients together, then add squash. Shape into patties.
Heat 1 tbsp of oil in an electric skillet. Place patties in skillet and cook until browned on both sides. Serve hot!
