Eclair Cake

Eclair Cake

This recipe is always well received. Make it the day before you need it to allow the flavors to meld.

Ingredients

For the crust:
1 cup water
1/2 cup butter
1 cup flour
4 eggs

For the filling:
8 oz cream cheese, softened
3 cups milk (2% or whole)
2 small pkgs vanilla pudding

For topping:
1 pt whipping cream
1 tsp vanilla
1/2 cup powdered sugar
chocolate syrup

Directions

For crust: Preheat oven to 400. In medium saucepan, melt butter in water until boiling. Remove from heat, and add in flour, stir until well blended. Stir in eggs one at a time, mix well. Bake in a greased 9 x 13 for 25 minutes, or until golden.

Filling: In a mixing bowl, blend cream cheese, pudding mix. Slowly add in milk. Mix well, and pour into cooled crust.

Topping: In a mixing bowl, beat the cream, until soft peaks form, gradually add in powdered sugar, and vanilla. Beat until almost stiff. Spread over pudding mixture.
Drizzle with chocolate syrup. I like to make rows of the syrup, and then carfully marble it with the whipped cream.
