Breakfast Cookies

This a great cookie to grab on the way out the door, and satisfies well until lunch, just grab one or two on the way out.


Cream Together :
1 cup Sugar (1/2 Cup honey)
2 ripe Bananas
1 egg
¾ cup softened butter

Stir In:
1 ½ cup flour (can use ½ white and ½ whole wheat flour)
½ tsp baking soda
¼ tsp salt
¼ tsp nutmeg
¾ tsp cinnamon
1 ¾ cup oatmeal ( Quick or Old Fashioned)

Add in any of the following depending on taste and how much you can pack in the mixing bowl:
6 oz Chocolate Chips (I prefer butterscotch, you can play here)
½ cup raisins (gold or regular) (Craisins are good too)
½ cup coconut
½ cup nuts (you choice, walnuts, pecans, peanuts almonds)
½ cup chopped dates
½ cup dried fruit (I like dried chopped pineapple)
Or anything else you can think might be good in here. My favorite so far has been a cup or so of trail mix some chopped dried pineapple, raisins and butterscotch chips, oh yea walnuts.


Combine ingredients; drop by rounded tablespoons on an ungreased cookie sheet.
Bake at 350 for about 15 minutes. Or until golden brown on the edges. Let cool for about 5 minutes, remove from cookie sheet and cool on wire rack.

Store in a covered or sealed container and they'll last quite a while
