1. Mix sugar with cinnamon in a gallon size ziplock bag.
2. Peel and core apples.
3. Add apples to cinnamon/sugar mixture. Shake well.
4. Pour apples/sugar/cinnamon into a 9-inch pie plate lined with crust.
5. Place 2nd pie crust on top. Flute edges and poke holes on top for steam to escape.
6. Sprinkle top crust with a small amount of sugar. Rub it gently into the crust.
7. Bake at 425 for 50 minutes.
