Pumpkin Woopie Pies

Kids of all ages love these. Filling is not real sweet with a good cream cheese flavor. ENJOY


2c lt. brown sugar
1c oil
1 1/2c Libby's pumpkin pie mix
2 eggs
1t vanilla
3c flour
1t salt
1t baking powder
1t baking soda
3/4t cinnamon
1/4t cloves
1/4t ginger
1 8oz. block of cream cheese
1 stick of butter
1t vanilla
2c 10x sugar


Cream sugar with oil, add pumpkin, eggs and vanilla. Add dry ingredients.
Drop using a small cookie scoop onto a slightly greased cookie sheet. Bake 12-14 min. or til lightly browned.
Beat filling til light n fluffy. I use the same scoop I used for the cookies for the filling. Wrap each one in plastic wrap to store.
