Brown beef or turkey in a large skillet. Drain well. Add remaining ingredients and cook for 5 minutes. Drain well and cool. Roll about 2 Tbsp. or so of filling in egg roll wraps according to wrapper package directions. Fry a few at a time in 375* oil. 1 minute of frying time per side should be sufficient time.
Keep hot in a warm oven. Serve egg rolls immediately while they are still crispy. Serve with Chinese Hot Mustard.
