Amish Ham Loaf

Amish Ham Loaf

This is a little different type of dish from the Amish county of Lancaster, Pennsylvania.

Ingredients

1 lb. cured ground ham
1 lb. ground pork or hamburger
2 eggs
2/3 cracker crumbs or oatmeal
1/3 cup minute tapioca
1/4 cup milk (I use Carnation evaporated milk)

Dressing:
1/4 apple cidar vinegar
1/2 cup water
1/2 cup dark brown sugar
1 T. mustard

Directions

Mix ingredients and form into a loaf. Boil dressing a few minutes. Pour over loaf
Bake in moderate oven (350 degrees) about 1 1/2 to 2 hours basting occasionally. Dressing should become thick and syrupy.
