Chocolate Chip Cookies

I saw these and just had to try them because of the 2 types of flour that are used. Be sure to let the dough chill for at least 24 hours.
I am writing out the full recipe it can be cut in half easily.


3 Cups Plus 2 Tb pastry flour
3 Cups bread flour
1 Tb baking powder
2 tsp baking soda
1 pound butter softened
1 3/4 Cups sugar
2 1/4 Cup Brown sugar, packed
4 Large eggs
1 Tb vanilla
2 Pounds chocolate chopped or chips. Or chunks


In large bowl of mixer cream butter and sugars for 5 to 7 minutes.
Add eggs one at a time beat well between additions. Add vanilla.
In another bowl sift together dry ingredients.
Add to creamed butter mixture and mix just until incorporated.
Mix in chocolate by hand or if you use mixer do not over mix.
Cover and refrigerate dough at least 24 hours.
When ready to bake pre heat oven to 350 degrees F.
Like cookie sheets with parchment.
For giant cookies use 4 ounce scoop and bake 18 to 20 minutes.
For large cookies use 2 ounce scoop and bake 10 to 15 minutes.
