A very good cake that is so easy and so fast to make


1 can apricot halves (drain and save 1/3 cup juice)
2 Tblsp melted butter
1 egg
1/2 tsp lemon extract

2/3 cup flour
2/3 cup sugar
1/2 tsp baking powder
1/8 tsp salt
Cinnamon/sugar for topping


Grease and flour an 8' round baking pan
Heat oven to 350
Beat 1 egg until thick and lemon colored. Add 1/3 cup apricot juice, melted butter, lemon extract and salt.
Add flour. sugar, baking powder and salt. Mix well.
Pour into greased/floured pan and cover with apricot halves. They will try to sink - that's OK.
Sprinkle on a generous amount of cinnamon sugar.
Bake 35-40 minutes.
