Pumpkin Orange Pecan Bundt Cake

Ingredients

  • 1 cup coarsely chopped pecans
  • 1 (56.1 oz.) Libby's Pumpkin Bread Kit
  • 4 large eggs
  • 1 cup orange juice
  • 1/2 cup vegetable oil
  • 1 to 2 teaspoons orange zest (optional)

Directions

PREHEAT oven to 350° F. Grease 12-cup Bundt pan. Sprinkle pecans over bottom of pan.

COMBINE eggs, orange juice, oil, zest and Libby’s® Pumpkin in large bowl. Mix until well blended. Add Bread Mix. Stir just until moistened.

POUR batter into prepared pan.

BAKE for 65 to 70 minutes or until wooden pick inserted in center comes out clean.

COOL in pan on wire rack for 10 minutes. Remove to wire rack to cool completely. Drizzle icing over cooled cake.
