Directions
Preheat oven to 375° F.
In food processor, combine graham crackers, vegetable shortening and water.
Press into the bottom of a 9" pie plate.
Bake crust for about 7 minutes.
Combine remaining ingredients. Remove crust from oven and pour pumpkin mixture over crust.
Continue baking filled crust for another 40 minutes.
Cool on wire rack. Serve immediately or refrigerate.
NOTES:
Optional: Add a half cup chopped pecans, sprinkled on top, immediately after pie comes out of the oven. The pecans add 47 calories and 5 g fat per slice.
