Corn Atole Beverage

Corn Atole is a traditional Central American hot beverage. In Guatemala at 3:00 p.m., everyone goes out to get their "atole de elote" along with tamales or tostadas at a nearby food stand. If you like more cinnamon flavor, sprinkle with some ground cinnamon and savor this hot, comforting drink.

Ingredients

  • 3 cans (15.25 oz. each) sweet whole kernel corn (about 4 cups) undrained, divided; reserve 1/4 cup kernels for garnish
  • 2 1/2 cups water
  • 1/4 cup granulated sugar
  • 1 cinnamon stick
  • Pinch of salt
  • 2 cans (12 fl. oz. each) NESTLÉ® CARNATION® Evaporated Milk

Instructions

PLACE one can of corn with its liquid and 1/2 cup water in blender; cover. Blend until smooth. Pour through fine mesh strainer into large saucepan, pressing pulp against mesh to release liquid. Discard solids. Repeat with remaining cans of corn and 1 cup water.

STIR in sugar, cinnamon stick and salt. Bring to a boil. Reduce heat to low; stir occasionally.

BRING evaporated milk and remaining 1 cup water to a boil in medium saucepan. Stir milk mixture into corn mixture; remove from heat. Remove cinnamon stick. Pour into mugs. Garnish each serving with reserved corn kernels.
