These mini pumpkin pie desserts are so cute to give to my family. I baked them and gave them to my 2 boys in Lincoln, NE. They were delighted to receive them! All they had to do was buy some Whip Cream....Mom's always know how to make her boys smile and I'm glad I did. So delicious! Try this recipe out!

Just baked up a batch of mini-pumpkin pies. Used roll-out pie dough, a biscuit cutter with ruffled edges, and a mini-muffin pan. These are perfect 2-3 bite pies, and the pie-crust is nice and flakey-crispy all the way. Wish I could upload photo's - I know everyone would love them!

My father and godson love pumpkin pie. One time I made the 10" pumpkin pies and the minis. There was enough for everyone. Not a crumb went to waste.
Mini Pumpkin Pie

Pumpkin is my daughter in-law's favorite pie. I made this at thanksgiving and she was thrilled. Her own little pie and she didn't have to share it with anyone. Excellent recipe and a real keeper for your Recipe box.
Use Muffin Tins!

I couldn't find any small pans and needed to make these with my sons kindergarten class. I used muffin tins sprayed with nonstick spray. Unroll refrigerated pie dough and cut circles with a round cutter. Be sure they are large enough to go up the sides of the tin. Fill 2/3 full with pumpkin filling. Bake at 375 for about 25-30 minutes. They popped right out and with a squirt of whipped cream were so cute and the perfect size for the kids!
Mini Pumpkin Pies

I made two different batches of these pies with this recipe (1 with cinnamon and 1 without) and there are no leftovers to wrap and store! The directions are easy to follow. The pies have a wonderful "made from scratch" taste.

Could not find the mini shells; used flat pie crust and made my own in my mini pans. Substituted sweet potato in place of pumpkin pie mix. Everyone glad to have their "own pie". Easy clean up!! You gotta love it!!
