Description

Creamy Pumpkin Soup makes a great first course for a Thanksgiving meal or Fall and Winter entertaining.

Ingredients

  • 1/4 cup (1/2 stick) butter or margarine
  • 1 small onion, chopped
  • 1 clove garlic, finely chopped
  • 2 teaspoons packed brown sugar
  • 1 can (14 1/2 fluid ounces) chicken broth
  • 1/2 cup water
  • 1/2 teaspoon salt (optional)
  • 1/4 teaspoon ground black pepper
  • 1 can (15 ounces) LIBBY'S® 100% Pure Pumpkin
  • 1 can (12 fluid ounces) NESTLÉ® CARNATION® Evaporated Milk
  • 1/8 teaspoon ground cinnamon

Directions

MELT butter in large saucepan over medium heat. Add onion, garlic and sugar; cook for 1 to 2 minutes or until soft. Add broth, water, salt and pepper; bring to a boil, stirring occasionally. Reduce heat to low; cook, stirring occasionally, for 15 minutes. Stir in pumpkin, evaporated milk and cinnamon. Cook, stirring occasionally, for 5 minutes. Remove from heat.

TRANSFER mixture to food processor or blender (in batches, if necessary); process until smooth. Return to saucepan. Serve warm.

This recipe is so easy!!!! This was my first time trying pumpkin soup and I really enjoyed it! I think I used to much onion or didn't let it cook long enough (like another reviewer said) and I still liked it. I'm the only pumpkin eater in the house (unless it's pumpkin muffins) so I'll freeze the leftovers for a quick lunch!!!! Can;t wait to try some of the modifications other reviewers suggested! No gluten - which is great!!! Thank you for a wonderful recipe!

I tried something similar to this in Australia. I searched for years to try find like what I had tasted. After many trail and error, endured by my family, LOL, I have found the best tasting Pumpkin soup in the states!!

I think that I added too much brown sugar. A little too sweet for a soup....(my fault) yet, I liked it. Next time, I won't be so heavy handed on the ingredients....:)

WOW, this was both easy and delicious! My guy, who's no big fan of pumpkin loved this; mind you I didn't tell him it was Pumpkin until after his second helping! He still asks me to make it again; this is my new Thanksgiving dish! Thanks VBB & Carnation, you've given us a winner in this recipe!

This recipe was very disappointing. I even tried what one reviewer suggested; adding some more cinnamon, but it didn't help.

Great first course

I made this dish for the first time for my family this Thanksgiving. It tasted wonderful. I was able to make it earlier in the day and refrigerate it, reheating it when dinner was ready and it still tasted good. That was very handy for a day like Thanksgiving. I will definitely make this for work potlucks. It had a great texture and a mild, sweet, likeable taste (I blended to make it smooth). If I hadn't told them, they might not have guessed that it was pumpkin. Did I mention that it was easy to make as well?

I am recently diagnosed with a TON of food allergies, so this was my first holiday with restrictions...hence, I cooked a large portion of the food myself; for the first time!:) My whole family was OBSESSED with this soup, and so am I!
